Cognac has a soft and rounded taste with rich fruity notes and a light

and gives each an extended cryoextraction – which pulls every possible nuance of flavor out of the skins but in a delicate way that keeps harsh tannin at bay

The main wine of their chateau is this red made from 75% merlot

Finishes a bit unyielding

The nose displays nutty aromas with a hint of cold earl grey tea evident. The palate is initially quite dry but a rounded finish provides some respite. T his sherry is a more friendly example of Amontillado than the Antique version. While the antique release has lost all its sweetness with age this wine has not yet dried out to the fullest extent.
