Del Maguey Jabali 47% 70cl Cambus Dried peat and wood embersDel Maguey Wild Jabali 47% ABV A big, bold, pronounced mezcal made in the tropical hills surrounding Santa Maria Albarradas village. The Wild Jabali mezcal varietal gives a surprising flavour profile, and is absolutely one to be explored. A mix of sweet, savoury and even cheesy, this is a masterclass in how including a portion of tails the last part of the distillation run can add a good amount of character to a spirit. Nose: Opens with cinnamon buns
