In recent years the reds have gone stratospheric in terms of quality, St Pierre levels, IMO Pinot, Ploussard and Trousseau from Arbois, fermented as whole berries for extra zing and aromatic splendour. This is all about delicacy and purity. Id be chucking it in the fridge for a short spell before draining the bottle, but thats
