Highly prized by chefs, foodies, and home cooks alike, they have a delicious, more refined, umami flavor, as well as very pretty, delicate, pink purple flesh. Grey shallots do not store as well as Dutch Red Shallots (only about 3 4 months), but they make up for it with their exquisite flavor. Plan to use them up by the winter
